Is there a way to export data in FM7 Pro so that the field name appears as a header? (For example, as a CSV file?)
My solution to this has been to enter the field names into fields in the first record, but I know there's probably a better way to do this.

Sure. You can select the format "Merge", that will include the field names, but may not be a workable format for you.

In FM8 you can also export to Excel, the export dialog in which you name the resulting worksheet will ask you if you wish to use field names as headers.
