After deleting all sample data, should one go into the db and reset the prime IDs to start from one again or is there a danger in doing that to some of the tables.

If all the sample data is gone there is no problem resetting the serial numbers (but no real need to do so either). However, resetting the serial numbers can be a problem if only *some* of the sample data has been deleted. For example, if you've deleted contacts but not appointments, some of those appointments still have contact IDs associated with them: IDs you wouldn't want to reuse.
