I would like to change both contact and company text displayed using <<$$sc_companySelectorMessage>> and <<$$sc_contactSelectorMessage>> script parameters. Where are these global parameters set and how can I change them?

I just searched the scripts in the SeedCodeComplete file for you using the 2empowerFM Developer Assistant tool:

I found the $$sc_companySelectorMessage variable in these scripts:
Select Primary Company
Select Project Company
Edit Invoice
OK Invoice Edit
Cancel Invoice Edit
Edit Purchase Order
OK Purchase Order Edit
Cancel Purchase Order Edit

And the $$sc_contactSelectorMessage variable in these:
Update Association
Update Company Associate
Select Primary Project Contact
Update Project Contact
Edit Invoice
OK Invoice Edit
Cancel Invoice Edit
Edit Purchase Order
OK Purchase Order Edit
Cancel Purchase Order Edit
Add Staff
